Salad
- 3 cups kale – thinly sliced leaves
- 1 mango – diced small
- 1 avocado – diced medium
Dressing
- 1 scallion – diced thin
- ½ tsp grated ginger
- 1 Tbsp rice vinegar
- 2 tsp minced parsley
- 1 teaspoon miso paste
- 2 lemons – juiced
- 2 Tbsp extra-virgin olive oil
- Sea salt
- Freshly ground black pepper
Instructions
- Dressing – In a mini blender or food processor, combine all the dressing ingredients and blend until smooth.
- Salad – In a large bowl, combine the kale, mango, and avocado. Pour on as much of the dressing as desired and toss gently to combine
