Mango Avocado Kale Salad

Ingredients

Salad

  • 3 cups kale – thinly sliced leaves
  • 1 mango – diced small
  • 1 avocado – diced medium 

Dressing 

  • 1 scallion – diced thin
  • ½ tsp grated ginger
  • 1 Tbsp rice vinegar
  • 2 tsp minced parsley
  • 1 teaspoon miso paste
  • 2 lemons – juiced 
  • 2 Tbsp extra-virgin olive oil 
  • Sea salt 
  • Freshly ground black pepper

Instructions

  1. Dressing – In a mini blender or food processor, combine all the dressing ingredients and blend until smooth.
  2. Salad – In a large bowl, combine the kale, mango, and avocado. Pour on as much of the dressing as desired and toss gently to combine
