- 1 cup butter, softened
- 1 1/4 cup confectioners’ sugar
- 1/2 tsp. salt
- ¼ cup pure pumpkin puree
- 2-1/4 cups all-purpose flour or oat flour
- ½ tsp. baking soda
- 24 dark chocolate kisses, unwrapped
Instructions
- Preheat the oven to 350°. In a large bowl, mix butter, confectioners’ sugar and salt until combined with an electric mixer.
- Mix in pumpkin puree with the mixer.
- Add flour and baking soda and mix till it forms dough.
- Refrigerate the dough for 30 minutes or overnight.
- Shape dough into 1.5 in. balls.
- Place 1 in. apart on greased baking sheets.
- Bake for 10 minutes or until the bottoms are light brown.
- Immediately press a chocolate kiss into the center of each cookie.
- Cool on a wire rack after 5 minutes on the baking sheet.
