Mushroom and Chive Quiche

Ingredients

  • 1/2 (14.1-ounce) package refrigerated or frozen pie 
  • 1 to 1 ½ cups 2% milk or milk substitute
  • 4 large eggs
  • teaspoon ground nutmeg
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 to 2 tablespoons freshly chopped chives
  • 1 teaspoon olive oil
  • 1 ½ cups sliced cremini mushrooms
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 400°.
  2. Pre-bake the crust. Roll dough to fit slightly larger than a 9-inch fluted tart pan. Bake in the oven. Reduce oven temperature to 375°.
  3. Heat a skillet over medium heat. Pour in oil, add mushrooms, and saute’ until softened.
  4. In a large bowl, whisk together eggs, milk, chives, nutmeg, salt, and pepper.
  5. Spoon the mushrooms and cheese into the crust. Pour in egg mixture and carefully transfer to oven.
  6. Bake until set about 35 to 40 minutes. Cut into wedges and serve warm.
