Roasted Apples & Cauliflower with Dill

Ingredients

  • 1 large cauliflower 
  • 1 large red onion
  • 2 crisp tart apples 
  • 2 tablespoons fresh dill 
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat oven to 450°F.
  2. Cut the cauliflower into florets. 
  3. Slice the onion. 
  4. Core and chop the apples into small pieces.
  5. Thinly slice dill.
  6. Place the cauliflower, red onion, and apples into a large bowl and mix together with the olive oil, salt and pepper to taste. 
  7. Line a baking sheet with parchment paper. Place the veggies on the baking sheet, then roast for 30 – 40 minutes.
