Makes 24 cookies
- 1 cup unsalted sweet cream butter softened
- 1 large eggs
- 1 tsp peppermint extract
- 2 cups flour
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2/3 cup cocoa powder
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 24 unwrapped peppermint kisses
- 1 cup chocolate chips, melted
Instructions
- Preheat oven to 350 degrees
- Mix the butter and both kinds of sugars until light and fluffy with electric mixer.
- Add egg and mix just until smooth.
- Mix in peppermint extract.
- In a large bowl, combine flour, cocoa, salt, baking powder and baking soda and mix.
- Gradually sift the dry ingredients to butter mixture and mix until combined.
- Refrigerate the dough for an hour or longer.
- Roll the dough into an inch ball.
- Bake for 8-10 minutes.
- Press one peppermint kiss into the top of each cookie as soon as they come out of the oven.
