Chocolate Peppermint Thumbprint Cookies

Ingredients

Makes 24 cookies

  •     1 cup unsalted sweet cream butter softened
  •     1 large eggs
  •     1 tsp peppermint extract
  •     2 cups flour
  •     1/2 cup sugar
  •     1/2 cup brown sugar
  •     2/3 cup cocoa powder
  •     1/4 tsp salt
  •     1/4 tsp baking powder
  •     1/4 tsp baking soda
  •     24 unwrapped peppermint kisses
  •     1 cup chocolate chips, melted

Instructions

  •     Preheat oven to 350 degrees
  •     Mix the butter and both kinds of sugars until light and fluffy with electric mixer. 
  •     Add egg and mix just until smooth.
  •     Mix in peppermint extract.
  •     In a large bowl, combine flour, cocoa, salt, baking powder and baking soda and mix.
  •     Gradually sift the dry ingredients to butter mixture and mix until combined.
  •     Refrigerate the dough for an hour or longer.
  •     Roll the dough into an inch ball.
  •     Bake for 8-10 minutes.
  •     Press one peppermint kiss into the top of each cookie as soon as they come out of the oven.
