No Crust Cranberry Orange Pie

Ingredients

  •     1 cup unbleached baking flour
  •     1 cup sugar
  •     1/4 tsp. salt
  •     2 cups fresh cranberries
  •     1 orange
  •     1/2 cup chopped walnuts
  •     1/2 cup (1 stick) butter, melted
  •     2 eggs, beaten
  •     1 tsp. almond extract

Instructions

  •     Preheat oven to 350 degrees F. 
  •     Grease a pie pan.
  •     Combine the flour, sugar, and salt. 
  •     Add the juice of one orange and one teaspoon of the orange zest.
  •     Stir in the cranberries and the walnuts.
  •     Stir in the butter, beaten eggs, and almond extract. 
  •     Spread the batter into the prepared pan.
  •     Bake at 350 degrees F for 35-40 minutes.
