Fresh Vegetable Rice Paella

Ingredients:

1 1/2 Pint broccoli florets

1 red bell peppers

1 medium zucchini , diced

1 medium yellow onions , diced

1 1/2 Pint tomatoes , dicede

1 Pint cooked garbanzo beans

1 Quart cooked brown rice , or white rice

1/2 tsp saffron

1 tsp ground ginger

1 1/2 Cup fresh or frozen peas

1/2 Cup sliced mushrooms

Instructions:

Directions: Boil broccoli in a 2 quart sauce pan for 4 minutes, drain. Heat oil in a skillet over medium heat, Saut\’e peppers, zucchini, and onion for five minutes. Stir in remaining ingredients, including broccoli, cook for 5 more minutes stirring frequently until hot. Season to taste.
