- 2 Eggs
- 1/2 Teaspoon Vanilla Extract
- 1/2 Cup (50 grams) Almond Flour
- 1/2 Cup (60 Grams) Tapioca Flour
- 1/4 Cup Steel Cut Oats
- 1 Teaspoon Baking Powder
- Pinch of Salt
- 1/3 Cup Add-Ins of Choice (Chocolate Chips, Blueberries, Bananas, Etc.)
- Berries and Peanut Butter for Topping
INSTRUCTIONS
- Mix eggs and vanilla extract in a bowl and whisk until combined.
- Add in the almond flour, tapioca flour, oats, baking powder, and a pinch of salt and mix it.
- Add water to thin the batter.
- Spray a skillet with non stick cooking spray.
- Once hot, add 1/4 cup batter and add-ins if using on to the pancake batter.
- Let cook until golden brown – about 3 minutes – then flip and continue to cook for about a minute until pancakes are fully cooked.
- Serve pancakes with berries and drizzle peanut butter on top for extra protein goodness.
