INGREDIENTS
- 3/4 Cup Almond Flour
- 3-4 Tablespoons Granulated Sugar or Stevia
- 1 Teaspoon Baking Powder
- Pinch of Salt
- 1 Cup Lemon Flavored Coconut Yogurt
- 2 Large Eggs
- 1/2 Teaspoon Vanilla Extract
- 1 Scoop Vanilla Protein Powder (optional)
- 1 Lemon (for the rind)
- 1/2 Cup Fresh Blueberries
INSTRUCTIONS
- Preheat oven to 350 degrees F.
- Mix dry ingredients together in a large bowl.
- Add the yogurt, eggs, and vanilla extract in a separate bowl and whisk until smooth.
- Add the dry ingredients to the egg mixture.
- Use a grater to shave off the lemon rind and add to the mixture.
- Gently fold in blueberries.
- Spread 2 tablespoons of mixture two inches apart on a nonstick baking sheet.
- Bake for 18-22 minutes.
