Ingredients
- 2 cups old-fashioned rolled oats
- 3 c. oat milk
- 2 tbsp. maple syrup or honey
- 1/2 tsp. Pumpkin pie spice
- 4 large baking apples
- 2 tbsp. dried cranberries
- 2 tbsp. raisins
- 2 tbsp. chopped walnuts
Instructions
- Preheat oven to 400°.
- Mix in oat milk, raisins, cranberries, and walnuts with oats.
- Cook oats in the microwave for 2 minutes on high heat, then another minute on medium heat and let them sit for 15 minutes.
- Stir in maple syrup/honey and pumpkin pie spice and let cool slightly.
- Transfer apples to a glass baking dish and spoon in oatmeal.
- Bake until the apples are soft, between 25 – 35 minutes.
