Peach Arugula Salad

Ingredients

  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon honey mustard
  • 3 shallots, thinly sliced
  • Salt and pepper to taste
  • 2 large ripe peaches cut into wedges
  • 1/2 cup pecans
  • ½ cup raisins
  • ½ cup feta cheese
  • Baby arugula 

 

Instructions

  • Combine all the liquid ingredients to make dressing.
  • Layer the peaches, pecans, raisins, feta cheese and arugula in a large bowl. Pour the dressing over the top, then toss until everything is coated.
