Ingredients
- 2 cups cherry tomatoes halved
- 1 zucchini
- 1 yellow squash
- 1 red onion thinly sliced
- 2 tbls. chopped basil
- 2 tbls. chopped mint
- 2 tbls. chopped chives
- ¼ cup vinegar
- ¼ cup olive oil
- Salt and pepper to taste
Instructions
- Pre-heat the grill or oven to medium-high.
- Grill the zucchini and yellow squash for 3 – 4 minutes each side.
- Thinly slice the zucchini and squash and spread out on a platter.
- Combine cherry tomatoes with vinegar and olive oil, sliced onion, chopped basil, mint and chives.
- Season with salt and pepper and set aside.
- Top with the tomato mixture and let sit, 30 minutes. Transfer to a bowl.
