- 6-8 Chicken drumsticks
- 1/4 cup worcestershire sauce
- 1/4 cup plum sauce
- 2 tbsp GF soy sauce
- 2 tsp grated ginger
- 4 plums, halved, stoned
- 1 bunch bok choy, cut in length
- 3 carrots cut into small sticks
- 3 scallions chopped
Instructions
- Preheat the oven to 250°C.
- Place chicken in a bowl. Add the seasonings and sauces.Toss to coat evenly. Refrigerate for 30 minutes to 2 hours.
- Line a large baking tray with baking paper. Spray with olive oil. Arrange chicken in a single layer on a lined tray.
- Bake for 30 minutes.
- Add the plums, carrots and bok choy to the chicken mixture on the tray. Bake for 10 mins or until the plum is just tender.
