Plum Chicken Bake

Ingredients

  • 6-8 Chicken drumsticks
  • 1/4 cup worcestershire sauce
  • 1/4 cup plum sauce
  • 2 tbsp GF soy sauce
  • 2 tsp grated ginger
  • 4 plums, halved, stoned
  • 1 bunch bok choy, cut in length
  • 3 carrots cut into small sticks
  • 3 scallions chopped

Instructions

  • Preheat the oven to 250°C. 
  • Place chicken in a bowl. Add the seasonings and sauces.Toss to coat evenly. Refrigerate for 30 minutes to 2 hours.
  • Line a large baking tray with baking paper. Spray with olive oil. Arrange chicken in a single layer on a lined tray.
  • Bake for 30 minutes. 
  • Add the plums, carrots and bok choy to the chicken mixture on the tray. Bake for 10 mins or until the plum is just tender.
