Cauliflower with Beans

Ingredients

  • 1 tbsp. vinegar
  • 1 tbsp. tomato paste
  • 2 tsp. Ground cumin
  • 1/8 tsp. Red pepper powder
  • 3 tbsp. olive oil, divided
  • Kosher salt
  • 2 lbs cauliflower florets
  • 2 garlic cloves grated
  • 1 onion, cut into 1/2-inch-thick wedges
  • 1/2 lb. green beans, trimmed and halved
  • ½ lb edamame beans
  • Chopped fresh cilantro

Instructions

  • Preheat the oven to 350 °F
  • Mix vinegar, tomato, spices and seasonings, and oil in a bowl
  • Add cauliflower, garlic, and onion and toss to coat
  • Spray a baking sheet with olive oil and add cauliflower mixture to it 
  • Bake for 20 minutes till tender
  • Add green beans and edamame and bake another 8 – 10 minutes
  • Sprinkle with cilantro and serve warm.
