- 1 tbsp. vinegar
- 1 tbsp. tomato paste
- 2 tsp. Ground cumin
- 1/8 tsp. Red pepper powder
- 3 tbsp. olive oil, divided
- Kosher salt
- 2 lbs cauliflower florets
- 2 garlic cloves grated
- 1 onion, cut into 1/2-inch-thick wedges
- 1/2 lb. green beans, trimmed and halved
- ½ lb edamame beans
- Chopped fresh cilantro
Instructions
- Preheat the oven to 350 °F
- Mix vinegar, tomato, spices and seasonings, and oil in a bowl
- Add cauliflower, garlic, and onion and toss to coat
- Spray a baking sheet with olive oil and add cauliflower mixture to it
- Bake for 20 minutes till tender
- Add green beans and edamame and bake another 8 – 10 minutes
- Sprinkle with cilantro and serve warm.
