Roasted Apples & Cauliflower with Dill

Ingredients

  • 1 large cauliflower 
  • 1 large red onion
  • 2 crisp tart apples 
  • 2 tablespoons fresh dill 
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Preheat oven to 450°F.
  • Cut the cauliflower into florets. 
  • Slice the onion. 
  • Core and chop the apples into small pieces.
  • Thinly slice dill.
  • Place the cauliflower, red onion, and apples into a large bowl and mix together with the olive oil, salt and pepper to taste. 
  • Line a baking sheet with parchment paper. Place the veggies on the baking sheet, then roast for 30 – 40 minutes.
