Ingredients
For the salad-
- 1 (15 ounce) can chickpeas, rinsed and drained
- 1 cup small diced honeycrisp apple
- 1/3 cup coarsely chopped toasted pecans*
- 1/3 cup dried tart cherries
- 1 stalk of celery, diced
- 2 tbsp chopped cilantro
- ¼ cup chopped scallions
For the dressing-
- 3 tbsp tahini
- 2 tsps honey
- 1 tsps dijon mustard
- 1 tsps vinegar
- ¼ tsps garlic powder
- ¼ tsps salt to taste
- freshly ground black pepper
Instructions
- Mix all the salad ingredients in a bowl. Mash the chickpeas slightly with a fork.
- Mix all the dressing ingredients in a bowl till they are blended smooth.
- Pour the dressing over the salad ingredients and mix it well till all the ingredients are coated.
