Pumpkin Chocolate Thumbprint Cookies

Ingredients

  • 1 cup butter, softened
  • 1 1/4 cup confectioners’ sugar
  • 1/2 tsp. salt
  • ¼ cup pure pumpkin puree
  • 2-1/4 cups all-purpose flour or oat flour
  • ½ tsp. baking soda
  • 24 dark chocolate kisses, unwrapped

Instructions

  • Preheat the oven to 350°. In a large bowl, mix butter, confectioners’ sugar and salt until combined with an electric mixer.
  • Mix in pumpkin puree with the mixer.
  • Add flour and baking soda and mix till it forms dough.
  • Refrigerate the dough for 30 minutes or overnight.
  • Shape dough into 1.5 in. balls. 
  • Place 1 in. apart on greased baking sheets. 
  • Bake for 10 minutes or until the bottoms are light brown.
  • Immediately press a chocolate kiss into the center of each cookie.
  • Cool on a wire rack after 5 minutes on the baking sheet.
