Gluten Free Oat Pancakes

INGREDIENTS

  • 2 Eggs
  • 1/2 Teaspoon Vanilla Extract
  • 1/2 Cup (50 grams) Almond Flour
  • 1/2 Cup (60 Grams) Tapioca Flour
  • 1/4 Cup Steel Cut Oats
  • 1 Teaspoon Baking Powder
  • Pinch of Salt
  • 1/3 Cup Add-Ins of Choice (Chocolate Chips, Blueberries, Bananas, Etc.)
  • Berries and Peanut Butter for Topping

INSTRUCTIONS

  1. Mix eggs and vanilla extract in a bowl and whisk until combined.
  2. Add in the almond flour, tapioca flour, oats, baking powder, and a pinch of salt and mix it.
  3. Add water to thin the batter.
  4. Spray a skillet with non stick cooking spray.
  5. Once hot, add 1/4 cup batter and add-ins if using on to the pancake batter.
  6. Let cook until golden brown – about 3 minutes – then flip and continue to cook for about a minute until pancakes are fully cooked.
  7. Serve pancakes with berries and drizzle peanut butter on top for extra protein goodness.
