Grilled Chicken Enchiladas

Ingredients

  •     3 6-ounce chicken breasts  
  •     1 cup tomato sauce
  •     1 cup BBQ sauce – divided into three parts
  •     2 cloves of garlic minced
  •     1/2 cup grated cheddar cheese 
  •     6 -8 corn tortillas

Instructions

  1. Marinade the chicken breast with half of the tomato sauce, ½ cup BBQ sauce, and minced garlic for 2-3 hours or overnight.
  2. Preheat the grill to 300 degrees
  3. Grill the chicken breasts till tender- 8 minutes on each side.
  4. Shred the grilled chicken breast and mix with ¼ cup BBQ sauce.
  5. Divide the shredded chicken between the tortillas. Set 2 tablespoons of the grated cheddar aside and sprinkle the rest over the chicken. Roll the tortillas and place them side by side in an 8-inch grilling pan.
  6. Mix together the red sauce and remaining BBQ sauce then pour over the tortillas. Top with a sprinkle of grated cheddar. 
  7. Put the pan on the grill for 3-5 minutes or till the cheese melts.
