- 3 6-ounce chicken breasts
- 1 cup tomato sauce
- 1 cup BBQ sauce – divided into three parts
- 2 cloves of garlic minced
- 1/2 cup grated cheddar cheese
- 6 -8 corn tortillas
Instructions
- Marinade the chicken breast with half of the tomato sauce, ½ cup BBQ sauce, and minced garlic for 2-3 hours or overnight.
- Preheat the grill to 300 degrees
- Grill the chicken breasts till tender- 8 minutes on each side.
- Shred the grilled chicken breast and mix with ¼ cup BBQ sauce.
- Divide the shredded chicken between the tortillas. Set 2 tablespoons of the grated cheddar aside and sprinkle the rest over the chicken. Roll the tortillas and place them side by side in an 8-inch grilling pan.
- Mix together the red sauce and remaining BBQ sauce then pour over the tortillas. Top with a sprinkle of grated cheddar.
- Put the pan on the grill for 3-5 minutes or till the cheese melts.
