Melon and Tomato Salad

The ideal summer salad with lots of lycopene. I love this fresh and juicy salad. Tomatoes and melon are a perfect match. Although it would be perfect for a summer BBQ, I like to enjoy it during fall and spring too. It’s an extremely simple, yet spectacularly refreshing salad. Ripe watermelon and cantaloupe accentuate the tomato’s sweetness. I love the crunch that cantaloupe brings to this salad.

I don’t use dairy but if you do top it with feta cheese will give it extra texture and taste.

I have made this salad with figs too. Figs added another interesting twist to this salad. I couldn’t get my hands on figs the day I recorded this video.

Drizzle it with the dressing right before you are ready to eat it. Enjoy this fruity, sweet goodness!

Recipe:

Ingredients

  • 1/4 large seedless watermelon
  • 1 red beefsteak tomato
  • 1 yellow beefsteak tomato
  • 1 cup crumbled feta cheese 
  • ¼ cup olive oil  
  • 2 tbsp. white balsamic vinegar 
  • 1 tbsp. honey
  • Salt  to taste 
  • Black pepper to taste

Instructions

  • Cut the watermelon lengthwise into slices
  • Cut the tomatoes lengthwise
  • Cut cantaloupe lengthwise
  • Arrange the melons and tomatoes alternating each slice
  • Whisk olive oil, vinegar, honey, salt, and pepper together in small bowl
  • Drizzle over salad.
