- 1 large cauliflower
- 1 large red onion
- 2 crisp tart apples
- 2 tablespoons fresh dill
- 3 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat oven to 450°F.
- Cut the cauliflower into florets.
- Slice the onion.
- Core and chop the apples into small pieces.
- Thinly slice dill.
- Place the cauliflower, red onion, and apples into a large bowl and mix together with the olive oil, salt and pepper to taste.
- Line a baking sheet with parchment paper. Place the veggies on the baking sheet, then roast for 30 – 40 minutes.
