Summer Squash and Tomato Salad

Ingredients

  •     2 cups cherry tomatoes halved
  •     1 zucchini 
  •     1 yellow squash 
  •     1 red onion thinly sliced
  •     2 tbls. chopped basil
  •     2 tbls. chopped mint
  •     2 tbls. chopped chives
  •     ¼ cup vinegar
  •     ¼ cup olive oil
  •     Salt and pepper to taste

 

Instructions

  •     Pre-heat the grill or oven to medium-high. 
  •     Grill the zucchini and yellow squash for 3 – 4 minutes each side. 
  •     Thinly slice the zucchini and squash and spread out on a platter. 
  •     Combine cherry tomatoes with vinegar and olive oil, sliced onion, chopped basil, mint and chives. 
  •     Season with salt and pepper and set aside. 
  •     Top with the tomato mixture and let sit, 30 minutes. Transfer to a bowl.
