Blueberry Lemon Scones

INGREDIENTS

  • 3/4 Cup Almond Flour
  • 3-4 Tablespoons Granulated Sugar or Stevia
  • 1 Teaspoon Baking Powder
  • Pinch of Salt
  • 1 Cup Lemon Flavored Coconut Yogurt
  • 2 Large Eggs
  • 1/2 Teaspoon Vanilla Extract
  • 1 Scoop Vanilla Protein Powder (optional)
  • 1 Lemon (for the rind)
  • 1/2 Cup Fresh Blueberries

INSTRUCTIONS

  1. Preheat oven to 350 degrees F.
  2. Mix dry ingredients together in a large bowl.
  3. Add the yogurt, eggs, and vanilla extract in a separate bowl and whisk until smooth.
  4. Add the dry ingredients to the egg mixture.
  5. Use a grater to shave off the lemon rind and add to the mixture.
  6. Gently fold in blueberries.
  7. Spread 2 tablespoons of mixture two inches apart on a nonstick baking sheet.
  8. Bake for 18-22 minutes.
  9. Let cool then enjoy!
