Salmon Cucumber Salad

Ingredients

  • 2 five-ounce Salmon fillets
  • 2 cucumbers 
  • 2 celery sticks 
  • 1 bunch scallions
  • 4 tablespoon olive oil 
  • 1 tablespoon lemon juice 
  • ½ cup full fat coconut milk 
  • 3-4 sprigs dill 
  • 2 cloves fresh garlic 
  • Sea salt – to taste

 

Instructions

  1. Cook the Salmon fillets in a skillet with two tablespoons olive oil over medium heat. 
  2. Cooking them for 5- 8 minutes on each side. 
  3. Once cooled, flake the salmon with a fork.
  4. Slice the cucumbers and celery into small chunks.
  5. Chop scallions into thin slices.
  6. In a blender, combine the rest of the ingredients. Blend until evenly mixed. 
  7. In a large bowl, combine cucumbers, celery, scallions, and flaked salmon. 
  8. Drizzle dressing over the top and toss together to evenly coat the ingredients.
